The McDougalls (The McDougall Program for a Healthy Heart; The Macdougall Program for Maximum Weight Loss), who have previously called for Americans to consume no more than 10 percent of fat in their diet, present a collection of simply prepared recipes that eschew eggs, dairy products, meat and fish. Many are fast versions of traditional vegan fare: Tofu Jambalaya; Vegetable Burritos; Quick Spicy Lentil Chili. Some are a bit more unusual, e.g., Artichoke Pasta Sauce; Gingered Green Grains; Black Bean Pizza. The speedy preparation of these dishes is based on the use of such convience foods as canned fruits and vegetables and pre-washed, bagged greens. Although the McDougalls don't supply nutritional analyses nor explicate the food-count parameters of recipes they offer, their fairly rigid posture is made clear in the brief chapter introductions in which they describe the dangers of a high-fat, high-cholesterol diet.
