Preservation Society Home Preserves: 100 Modern Recipes

Camilla Wynne. Robert Rose (Firefly, dist.), $24.95 trade paper (192p) ISBN 978-0-7788-0503-8

Former indie musician Wynne, founder of Preservation Society, still knows how to rock, and this time she's bringing the party to the pantry. Tapping into her considerable experience working in notable kitchens across North America, Wynne proves that preserving can be fun, modern, and pretty hardcore with recipes such as onion beer jam and Isaac's Breakfast Bacon Jam. The book is divided into nine main sections: jams, marmalades, jellies and butters, canned fruits, syrups, pickles, chutneys, food for the fridge, and even a section on how to cook with preserves. Wynne also includes a chapter on the basics of preservation, but in only four pages, the information provided is minimal and does not adequately cover the canning process for a true beginner. However, the instructions for the recipes themselves are easy to follow, and, as long as readers have a well-stocked liquor cabinet, they will likely already have many of the ingredients on hand. With the recent resurgence of preserving, there are now many new cookbooks on the subject; Wynne's book stands out among them by making use of local foods, introducing bold and exciting new flavors combinations, and encouraging readers to get creative in the kitchen.
