This book is based on the theory that if baked potatoes and stuffed potatoes and stuffed potato skins are a hit at fast food forums, then why not in home kitchens as well? The more than 200 recipes present all sorts of possibilities: creamy tuna melt skins, mushroom meat loaf skins, beef and potato curry skins, chicken skins parmigiana, as well as vegetarian skins and appetizer skins. With the addition of a section on yams (both skinned and whole), one can even satisfy a sweet tooth. A note of caution: this book's calligraphy is not well-suited to culinary computations. (May)
