If baking is a science, Wilson has compiled something akin to the periodic chart for chocolate cookies. Although the author of A Baker's Field Guide to Christmas Cookies has, for the most part, set this book up as a typical cookbook, with explanations of techniques up front and recipes in the back, the work does examine the chocolate chip cookie oeuvre in much the same way that a scientist scrutinizes elements and compounds. Wilson uses symbols to explain whether or not a particular cookie dough freezes well or if the finished products are sturdy enough to mail. She includes field notes that reveal tidbits on a cookie's origin and possible variations on the recipe. And she gives information on each cookie's""lifespan,"" ranging from four days (Chewy Brownie Chip Drops) to one month (Cappuccino Chocolate Chip Biscotti Dunkers). Yes, it's a gimmick, and in the end, this is really just a compendium of solid recipes. But bakers interested in expanding their chocolate chip cookie repertoire will find plenty of inspiration here, with recipes for creations ranging from Double Chip Browned-Butter Oat Scotchies to Milk Chocolate Chip Banana Streusel Cookies.
