Poor Fabio Viviani. When he tried to publish a cookbook last year, no publisher would give him the time of day, so he self-published. While he didn't wind up winning Top Chef, he did take home the "Fan Favorite" award, and—what do you know?—now publishers are clamoring for his next book. There's also a story about a little cookbook from a Martha's Vineyard farm that might be poised to get a major boost from Michelle Obama. Jam Today
Tod Davies's Jam Today: A Diary of Cooking with What You've Got (Exterminating Angel Press) is a book about how Davies, a home cook living in the mountains of Oregon, cooks every day with what she has on hand. Davies says her recipe for Chile Relleno Casserole is "the world's best recipe," and in some ways, it's easy to see why. It doesn't require a long list of ingredients, can be prepared fairly quickly, is comforting and versatile, and—most importantly—tastes very good. It's essentially a layered vegetable-cheese-egg dish, a sort of twist on huevos rancheros, made with jack and cheddar cheeses, roasted green peppers, canned green chilies, eggs, milk and paprika. I topped the finished dish with chopped scallion and cilantro, and a squirt of lime juice. With some blue corn tortilla chips, this made a light, easy supper. For the recipe, click here.
