Time and Tide: Recipes and Stories from My Coastal Kitchen

Emily Scott. Hardie Grant, $42 (256p) ISBN 978-1-78488-575-5

Chef and restaurateur Scott follows up Sea & Shore with a solid collection of recipes inspired by the Cornish coast. Classics such as spaghetti puttanesca, saffron risotto, and treacle tart appear alongside more creative fare, notably carrot and miso hummus with parsley and coriander; roast chicken with chorizo, garlic, and rosemary; and apricot-lavender compote. Flavor-packed seafood options—including Cornish crab cakes; scallops with beurre blanc, chives, and fennel; and mussels with smoked bacon, cider, clotted cream, and wild garlic—do not disappoint. Other recipes, like ratatouille, salad niçoise, and coq au vin, emphasize the influence Scott’s French heritage has had in her life. Between recipes, she shares soothing (if occasionally overlong) descriptions of the coast (“I am getting to know the cliff edges and the ever-changing shapes of the sea, the broad sand dunes between the headlands of Pentire East and Pentire Point West”) as well as endearing family anecdotes (“Recreating these transports me back to fond memories of time spent with my grandparents,” she says of the sugared fruit jellies). Complete with lush photography, this congenial volume will delight home cooks. (July)
