McGill University's Rosalind and Morris Goodman Cancer Research Centre works to discover ways to curtail cancer. This cookbook, compiled by cooks, nutritionists, doctors and volunteers, is intended to help fund the center's efforts and to educate readers about the benefits of healthy eating. The first of three parts is an introduction to the center's work. The second explains the eating philosophy of the book and outlines the nutritional analysis used. The third part is all about the food. Complemented by beautiful photographs, the recipes are an eclectic mix of traditional, international and popular health recipes that offer readers many avenues to explore healthier eating without feeling overwhelmed or deprived. Butter, salt, sugar, white flour and red meat are all kept to a minimum, and no chemicals or additives are used. Healthy eating advice is often contradictory, but the editors explain that certain facts can be relied upon, which, in combination, results in a diet quite like that of Okinawa or the Mediterranean. Health-related pointers guide readers, but the editors also acknowledge that food is fun. The prevailing philosophy? Enjoy food, enjoy life, but eat smart. (Oct.)
