The Long Life Cookbook

Anne Casale, Author Ballantine Books $17.95 (387p) ISBN 978-0-345-33377-3
This superb collection is aimed at the over-50 set, with a foreword by a professor of geriatrics. The emphasis is on single or double servings, as well as recipes that are low in sodium, cholesterol and sugar. However, dishes like pumpkin-apple or chilled tomato-mint soup, romaine-and-strawberry salad and grapefruit salad with watercress dressing will appeal to a variety of age groups. The fine array of main courses includes veal cutlets with Parmesan topping, chicken breast with lemon-caper-tarragon sauce, sauteed scallops with mushroom-herb sauce, speedy shrimp scampi, linguine with marinara sauce and spaghettini with creamy artichoke-heart sauce. Vegetables appear as marinated eggplant and baked tomatoes Provencale. Those who indulge in sweets will enjoy glazed apple loaf, banana flambe and crunchy blueberry cups. Casale authored Italian Family Cooking. (January)
