Some first-rate fish dinners are supplied here by Rapp ( Mother Earth's Vegetable Cookbook ). However, a few recipes (like deep-fried catfish with hush puppies or a rich chowder made with crabmeat, corn and cream) are not as healthful as the title intimates, and the author's fondness for costlier seafoods, such as scallops, shrimp and salmon, will force cooks on a budget to reserve these dishes for special occasions. Although entrees predominate, there are also savory suggestions for introductory courses, like a seafood sausage appetizer prepared with monkfish, shrimp and seasonings; a soup made of leeks and monkfish; and a Tahitian-style salad of tuna in coconut milk and lime. For the main courses, Rapp effectively uses a number of cooking styles to vary the offerings. He bakes bluefish fillets with farmer cheese, yogurt and mint; poaches shrimp in beer and tops it with melted dill butter; and garnishes fried mahimahi fillets with a rich sauce of sun-dried tomatoes and basil.
