This book is one of them. Author Saulsbury is a freelance food writer, fitness trainer, endurance athlete and creator of the healthy food blog, powerhungry.com. In this book, she creates over 200 recipes suitable for gluten-free, vegan and vegetarian diets and introduces the reader to the virtues of coconut oil and other coconut products. Recipes are relatively easy to follow, with fewer than five or six steps from beginning to end and include useful cooking tips. A feature on "power ingredients" describes the health benefits of specific foods. The author also provides a comprehensive list of ingredients, a helpful feature for building a food pantry accordingly. The book, complemented by some color photographs, introduces the reader to a world of exquisite flavors and foods that are healthy, delicious and very different from the typical North American fare while ensuring a very favorable culinary experience.
