Imaginatively making the most of a single-focus ingredient called yogurt cheese (recipe provided), the authors offer an array of creamy desserts for low-fat diets. Yogurt cheese is prepared by draining a significant amount of liquid from regular yogurt. In one example, the authors combine yogurt cheese with crushed fresh strawberries to make a strawberry ``ice cream.'' No one will confuse this with the richest diary products, but to those on a restricted diet, it can be a welcome treat. Other recipes among the considerable variety included here are versions of rum-raisin and chocolate-mint cheesecakes, mocha-chiffon, lemon-cheese and cranberry Bavarian pies, apricot mousse and cherry-chocolate brownie bars.
