Imagelicious blogger Konovalova debuts with a collection of solid, single-pan recipes. There certainly is no shortage of accessible dishes here, with entries such as eggs with bacon, potatoes, and mushrooms; sausages with sweet potatoes, onion, and peppers; a no-boil ricotta and broccoli pasta bake; a vegetarian lasagna; and a simple seafood boil, in which the standard seafood, corn, and potatoes are baked instead of boiled. Along the way, she suggests clever health-minded tips, such as using pumpkin puree as a binding agent in mini chicken meatballs in lieu of an egg, and employing applesauce instead of oil for corn bread. Her appetizers are surprisingly simple, such as a beet and goat cheese tart with a light filo crust, or a puff pastry of pear, blue cheese, and walnuts. Desserts include a strawberry slab cake and roasted cinnamon bananas. Home cooks may have to utilize more than one pan for a “complete meal,” however, as there are just as many single-course dishes here (mains such as spatchcocked chicken with lemons and oranges; and sides, roasted summer vegetables) as there are complete meals. That aside, harried home cooks are sure to appreciate the ease and simplicity of many of Konovalova’s dishes. (Aug.)
