Opening chapters provide tips, pantry essentials (such as Old Bay seasoning), homemade condiment recipes (including a cashew-based mayonnaise), and an overview of the Omni oven’s various uses, which also includes baking, broiling, dehydrating, rotisseriing, reheating, proofing, and slow-cooking. While an unexpected recipe for “bagels” earns its air quotes due to an ingredient list of self-rising flour and yogurt, readers will delight in the result’s authentic chewy texture. Vegetarians can take comfort in the presence of a number of tempting bowl options, such as tempeh with kale coconut salad, and sesame soy tofu over rice. Potato latkes are baked rather than air-fried, and the same treatment is given to a chocolate chip walnut cookie recipe and s’mores for two.
