Dusy (Smoothies) takes an appetizing and delightful foray into the world of Buddha bowls, with 50 recipes that build upon the basic concept of a bowl of cooked grains topped with healthy ingredients. As she writes, Buddha bowls include a combination of carbs, fat, and protein that can be easily tailored to any palate: “When done right, every bowl contains all the essential nutrients we need every day.” Each recipe is classified as vegan, vegetarian, or featuring fish, and often includes tips on substitutions—such as replacing “any fish with tofu or lentils”—and shortcuts. Recipes range from the easy and fairly quick to the more elaborate and labor-intensive “Super Bowls,” which include such appetizing, global-inspired combinations as spinach and hummus with pine nuts, rice noodles and prawns, and a hearty “Tuscany Bowl” with white beans and tomatoes.
