In this complement to The Carnivore Code, nutrition specialist Saladino provides the nuts and bolts of putting a heavily carnivorous diet into practice with delicious recipes that leave no part of the animal unused. Before diving into the dishes, he offers an in-depth explanation of why health-conscious readers should eschew a plant-heavy diet (claiming that many plants contain defense chemicals with “moderate or even high amounts of toxins”) and, instead, eat more animal organs and meat, “the most nutrient-rich foods on the planet.” To that end, he presents plenty of nose-to-tale dishes that call for traceably sourced proteins and rely on few spices for a flavorful outcome. “Carnivore” waffles are composed of ground lamb and eggs, while flatbread and “bagels” use finely ground pork rinds as a flour substitute. “Safe” carbohydrates such as squash, berry fruits, and honey are allowed in moderation and often factored in as sides, salsas, and sauces. Sweetbreads, beef hearts, and other organ meats get their due in simple preparations for tacos and stews, while a surprisingly rich dessert chapter features creations such as Bavarian cream pie enriched with tallow (rendered beef fat) and a multipurpose frosting that replaces “the junk” (i.e., oils and preservatives) with roasted bone marrow.
