In this fun and imaginative collection, husband-and-wife team Jessica and Stephen Rose, who sell Georgia peaches throughout Nashville from their Peach Truck, superbly demonstrate the peach’s versatility in a wide array of sweet and savory dishes. The Roses share their enthusiasm for the fruit in Dutch Baby, “a popover-pancake hybrid” baked in a cast iron skillet, as well as in coffee cake, salsa, jam, and the classic peach pie. Savory dishes include peach fritters, a hush puppy–like riff with garlic powder, coriander, Monterey Jack cheese, green onions, and a red bell pepper; roasted chicken with onions and peaches; a white pizza with chile, pancetta, and peach slices; pearl couscous with chickpeas, eggplant, Kalamata olives, and fresh peach quarters; a pulled pork sandwich with a peach-bourbon barbecue sauce; peach and sausage empanadas; and a peach prosecco granita.
