Noma Cookbook to Move Ahead at Artisan

A spokesperson for Artisan confirmed to PW that the forthcoming cookbook The Noma Guide to Building Flavour will be published on April 21, as scheduled, despite abuse allegations against author and Noma head chef René Redzepi.

The title is the third and final volume to come out of the three-book deal Artisan made with Redzepi in 2017, which reportedly pushed seven figures. Redzepi's previous titles with the imprint are Foundations of Flavor: The Noma Guide to Fermentation (2018) and Noma 2.0: Vegetable, Forest, Ocean (2022).

Noma, located in Copenhagen, is the world's top-rated restaurant. The New York Times initially broke the story of Redzepi's abuse earlier this month after dozens of former employees reported that the chef inflicted physical and psychological violence on staff for years.
